Red Velvet S'mores

Red Velvet S'mores with Cream cheese marshmallows!!
They are quite fun and all of the pieces can be made a few days in advance.

 
I had better photos but I lost them when my camera decided to suck.

Cream Cheese Marshmallows:
(make the night before)
recipe adapted from here

4 oz. cream cheese; room temp
1 tsp vanilla bean paste
3/4 cup water
4 1/2 tsp gelatin (2 packets)
2 egg whites; room temp
pinch of cream of tartar
1 cup sugar
1/2 cup light corn syrup
1/4 tsp salt
cornstarch for dusting

1    grease a 9x9 dish and then dust it with cornstarch so they won't stick
2    mix the cream cheese and vanilla together in a medium bowl
3    put 1/2 cup water in a bowl and sprinkle the gelatin over it, to soften
4    in a large bowl whip the egg whites and pinch of cream of tartar until they hold soft peaks
5    in a small pot heat sugar, corn syrup, salt and remaining 1/4 cup water until it starts to boil, bring sugar mixture to soft ball stage at around 240 degress F
6    remove from heat and mix gelatin into the sugar mixture and whisk
7    start your egg mixture whisking again on medium-high and drizzle in few tbs of hot sugar mixture, to warm up the eggs
8    on medium continue to drizzle in sugar mixture slowly, beat on medium-high for about 3-5 minutes- it will triple in volume
9    scoop out 1/4 of the egg mixture and fold it into the cream cheese mixture
10   then scrape the cream cheese mixture into the egg whites and whip for 15-20 seconds, don't over mix or they will deflate
11  pour marshmallow into the baking dish and spread out evenly, cover with plastic wrap and place in fridge or cool place overnight

Red Velvet Graham Crackers:
2 1/4 cup whole wheat flour
3/4 cup lightly packed dark brown sugar
2 tbs cocoa powder
1 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
1/4 tsp cardamom
1/8 tsp cloves
6 tbs butter
1/4 cup honey
1/3 cup whole milk
red food coloring


1    mix flour, brown sugar, cocoa, baking soda, salt & spices
2    melt butter and then add in honey and whole milk
3    stir in desired amount of red food coloring
4    pour liquid ingredients over flour mixture and stir until a dough forms
5    gather dough into ball, cover in plastic wrap and refrigerate for an hour (up to overnight)
6    once the dough is chilled preheat oven to 350 degrees F and line 2 baking sheets with parchment paper
7    roll out dough into a rectangle and about 1/4" thick
8    using a pizza cutter, cut dough into 2"x 2" squares and lay them on baking sheet
9    pierce dough with a fork a few times, sprinkle tops with a little cinnamon
10  bake for 10-15 minutes, they should slightly brown


To assemble:

1   melt 1/2 a bag of chocolate chips in a double broiler
2   pour chocolate over top of firmed marshmallows and spread evenly
3   place in fridge to allow chocolate to harden, about half hour
4   cut marshmallows to fit graham cracker sizes with large knife
5   place one in between 2 red velvet graham crackers
6   using a blow torch toast all sides of marshmallow
