Late Sunday night after we walked the beach and had already eaten ice cream hubs said he really wanted a cookie, but just one. I added to that saying I'd really like an oreo
Then I remembered we had some of these ice cream sandwich cookies left over
So I thought I'd try to make my own oreos
1/4 cup butter; room temp
3/4-1 cup powdered sugar
1 tsp vanilla; good real vanilla bean kind!
1 beat all the ingredients together until fluffy
2 voila! the middle of an oreo, but better because the vanilla flavor is swoon-worthy
3 slather onto a cookie, put another on top, get a glass of milk
this will make the inside of about 6 giant oreos, or if you make the ice cream sandwich cookie recipe and just cut the dough with a small biscuit cookie cutter it could fill about 1/3 of them
o so many possibilities just opened up, I want to make some in shapes with cookie cutters!
Also this really hit the spot, it was like a grown up gourmet oreo, fresh, vanilla filling and deeply chocolate cookie! WINNER!

Oreo Sandwich Cookies:
2 2/3 cup flour
2/3 cup + 1/4 cup cocoa powder
1 1/4 cup butter; room temp
1 cup of sugar
2 egg yolks
1 tbs vanilla
preheat oven to 350 degrees F
1 beat the butter, sugar and salt together until fluffy
2 beat in the yolks and vanilla until just combined
3 add the flour and cocoa powder in a little at a time, alternating flour and cocoa
4 mix until just combined
5 divide dough into 2 balls
6 on parchment paper roll out dough to about 1/4 inch
7 with a small biscuit cutter or glass cut dough into circles
9 transfer to parchment paper covered baking sheet, bake for 8-12 mintues
10 repeat with other ball of dough and let cool
