I made these for dinner the other night and mid-bite Joshua just looked at me and said "you get me, this is exactly what I wanted"
They are that good!
Recipe:
4 bell peppers
1 cup quinoa
cilantro
1/2 onion; chopped
3 cloves garlic; minced
2 jalapenos; chopped
1/2 cup carrots; grated
1/2 cup of corn
4 tbs. salsa
handful of parsley
preheat oven 350 degrees F
1 cut the top off the peppers and pull out the ribs and seeds, keep the tops
2 place them in boiling water for 20 seconds; makes brighter! and then
place them in a baking dish
3 then cook the quinoa and set aside (I put a cilantro cube from Trader Joe's in while I cooked it)
4 in a saucepan put a little oil and salt and pepper in and then throw in the
onion, garlic, jalapeno, saute them for about 5-7 minutes
5 dump the carrots, corn, and salsa in the saucepan and cook for 2 more minutes
6 then toss the quinoa in with the veggies and parsley and add salt and pepper
7 stuff the peppers tightly with the mixture and put their tops on
8 pour 6 tbs of water in the bottom of the baking dish with the
peppers and place in the oven
9 bake for 25-30 minutes or until insides are all warm
