Homeade Slice & Bake Cookies


I found a fantastic recipe for homeade slice and bake cookies that you can freeze or refrigerate until you need them. We took them out sailing and they were a hit, (except that since they have between a cookie and shortbread texture they crumbled but that's because we put them in a plastic bag and bike them there) so store them in a tupperware type container so they don't crumble.

The other awesome part about the recipe is you can put anything in them you want

-I made one recipe with sprinkles, cocoa nibs, and 1/2 cup chopped chocolate chips

-one with 1/2 cup chopped dried apricots and cranberries and
then rolled the finished cylinder in crushed toasted hazelnuts

Would also be fun to roll in sprinkles or coca powder
fill them with other fruits, nuts, white chocolate, ah so many fun options

Slice & Bake Cookies

2 sticks of butter; room temp
2/3 cup powdered sugar
2 egg yolks; room temp
1 tsp vanilla extract
pinch of salt
2 cups flour

1   in a large bowl beat the butter for 3-5 minutes
2   add in powdered sugar and mix until combined
3   beat in yolks, salt, vanilla AND YOUR CHOICE OF MIX-INS
4   add in flour and mix on low, only until combined
5   split the dough in half and wrap each half in plastic wrap and place in fridge for about 1/2 hour
6   pull them out 1 at a time and roll them into a cylinder, about 1-1/2", coat them in toppings if you want
7   then roll them back in plastic wrap and refrigerate for at least 2  hours or until you want to bake them, they could also go in the freezer at this point
8   when you want to bake them preheat oven to 350 degrees F and slice them between 1/4" to 1/2" thick
9   place them on cookie sheet and  bake for 10-12 minutes, they shouldn't be browned on top, just cooked
10 let them cool and enjoy! They have a really great texture to them too!
