I've been wanting to try making homeade cheez-its forever! Hubs thinks it's a funny idea because its such an easy thing to buy. I agree! But I still have been dying to give it a try. So to justify making them I made them with 1/2 whole wheat flour (I'd try all whole wheat next time, wanted to make sure the consistency was okay first) and with real cheddar cheese- Tillamook! it's local :)
They turned out quite tasty! And I honestly had a lot of fun making them, they're so cute!
Cheese-Its:
8 oz. sharp cheddar cheese; grated
4 tbs butter; room temp
1/2 cup whole wheat flour
1/2 cup all purpose flour
1 tsp salt
2 tbs cold water
1 mix cheese and butter
2 add in flour and salt, mix well
3 add in cold water, 1 tbs at a time
4 gather dough, wrap in plastic wrap and refrigerate 20 minutes
5 preheat oven 350 degrees F
6 roll out dough about 1/8" thick (I accidentally rolled some too
thick and those don't get the nice crisp as the thin ones do)
It may be easiest to split it into 2 and roll each individually

7 using a pizza cutter, cut the dough into little squares, mine were about 1/2" x 1/2"
8 poke a hole in the center of each square with the end of a toothpick (with the tip broken off)
9 place parchment paper on a baking sheet and transfer the squares over, they can be pretty close together
10 bake for 10-14 minutes, golden brown, check the bottoms and make sure they don't burn
11 let them cool and yay homeade cheese-its!
