I overbought mascapone for the tiramisu and I didn't want it to go to waste, so sitting at work one day it hit me- mascarpone scones. It turned out to be a very tasty idea. They were just moist/dense enough and the mascarpone lent a delicate sweetness that flowed perfectly with the cherry sauce.
Mascarpone Scones with Cherry Sauce:
cherry sauce:
2 cups cherries; pitted and halved
3/4 cup sugar
1 chop about 1/2 the cherries into smaller pieces
2 place sugar and cherries in a small saucepan and bring to a boil
3 let simmer until cherry mixture reaches 220 degrees F on a candy thermometer
4 let cool and transfer to a small container, store in fridge for up to 2 weeks
3 1/4 cup flour
2 tsp apple cider vinegar
1 tsp baking soda
1/4 tsp salt
1/4 cup sugar
4 tbs butter; room tempurature
8 oz mascarpone cheese; room temperature
1 tsp vanilla
1/4-1/3 cup heavy cream
preheat oven 425 degrees F
1 mix flour, soda, salt and sugar in a bowl
2 cut in butter and mascarpone cheese
3 mix in vanilla and 1/4 cup cream
4 knead until it comes into a soft dough, you may need to add a little more cream
5 roll out into a rectangle on parchment paper and cut into 10-12 triangular scones
6 bake for 8-10 minutes, golden brown around the edges
7 drizzle with cherry sauce
