Yogurt Blackberry Bread Loaf


Since we have tons of blackberries (an amazing problem) I was trying to come up with things to do with them this weekend. I wanted to bake some things that I could freeze and bring over to dinners with people in the next few weeks or unthaw and have for breakfast.

This blackberry bread fit the bill perfectly. Plus it looks so cute all swirled and berry stained.

from this recipe

1/2 cup butter; room temp
1 pint blackberries
1 1/4 cup sugar
1 1/2 cup flour
1/2 tsp salt
1/4 tsp baking powder
2 eggs
1/2 tsp vanilla
1/2 cup yogurt

preheat oven 350 degrees F

1    grease a loaf pan and line bottom with parchment paper
2    puree blackberries and 2 tbs sugar in a food processor
3    in a bowl mix together flour salt and baking powder
4    in another bowl beat together butter and remaining sugar
5    on low mix in flour mixture and yogurt until combined
6    pour mixture 1/2 the mixture into a loaf pan
7    plop spoonfuls of the blackberries onto the batter
8    pour over the other half of the batter
9    spoon the remaining blackberry mixture onto the batter
10  with a skewer or sharp knife drag the blackberry mixture around to swirl it into the batter
11  bake for 1 hour -1 hour 20 minutes, a toothpick should come out clean
12  let cool and lift from pan
