So we spent the other night dying and chopping up white chocolate that we food colored to make the rainbow chips.
He's actually really excited about it! I think my love of baking is starting to rub off on him occassionally.
to make the rainbow chips:
1 bag of white chocolate chips
4 different food colorings
1 melt 1/2 cup of white chocolate (melt in a pot that is in skillet with water in it so you don't burn it)
2 put food coloring in the bottom of a small cup
3 lay wax paper down on counter
4 stir white chocolate until melted and then pour into the cup
5 mix until coloring is throughout
6 pour onto wax paper and spread into a small rectangle, about 1/8-1/4" thick
7 repeat 1-6 for the remaining colors
8 once the chocolate is dry take a large knife and cut/chop them into pieces
9 mix them together
10 then mix them into thie frosting below
Vanilla Frosting:
1 1/2 cups of butter, at room temp. 3 3/4 cups of powdered sugar
1 1/2 tsp. vanilla extract
2 tsp. vanilla paste or 2 tsp vanilla extract
1 Whip butter in mixer on mid-high until very creamy
2 Turn mixer to low- or you'll get sugar everywhere, and mix in powder sugar no more than 1/2 cup at a
time. Mix in throughly before adding more.
3 Mix in the vanilla paste
4 Once it is all added increase speed and whip until fluffy and add the extract mixture. Mix until it is
throughly mixed it.
5 add in the rainbow chips from above and stir by hand
save some to top the cake with
White Chocolate mousse filling:
We weren't sure if there would be enough frosting so he made a white chocolate ganache to compliment the white chocolate rainbow chips
4 oz white chocolate
3/4 cup heavy cream
1 put 1/4 cup heavy cream and the white chocolate into a sauce pan
over medium heat until the chocolate is melted
2 remove from heat into a bowl
3 set for about 30 minutes, stirring occasionally
4 beat the remaining 1/2 cup heavy cream until soft peaks form
5 fold it into the chocolate mixture
6 put in fridge for abotu 30minutes-1 hour
7 spread onto top of one of the cake layers and then place other layer on top and then icing the cake
It turned out delicious!!!
LOVE the idea of making my own colored chips. I'm a HUGE sprinkles fan - so that cake definitely looks super yummy. Question for you though.....why don't you just add the food coloring directly into the pot while stiring the chocolate? Why put it in the cup? Inquiring minds want to know. :)
ReplyDeletehaha you'll love this then. I put them in cups because I didn't want to have to clean out the pot between colors, because I'm lazy :)
