Ginger-Citrus Carrots with Miso Glaze

Still trying to be a little more adventurous and international in my flavorings. This is a good one that doesn't result in very many dirty dishes.

Ginger Citrus Glaze:
2 tbs grated ginger
zest of 1 orange
juice from 1 orange
1 tsp maple syrup
1 tbs coconut oil, melted
1 tbs sesame seeds
pinch of sea salt

1   whisk all ingredients together in a small bowl

preheat oven 400 degrees F
1 bunch of whole carrots; well scrubbed but not skinned

1   coat carrots with glaze and place on baking sheet
2   roast for about 15 minutes: until tender but not soggy
3   remove and place on serving dish

Miso Dressing:
1/4 cup miso
1 tbs olive oil
1 tbs apple cider vinegar
1 tsp maple syrup
2 tbs water
1/2 tsp soy sauce

1   whisk together and pour over carrots
2   top with sesame seeds and serve
