Ladyfingers:
1/2 cup flour
egg yolks; room temp
5 tbs sugar
1/2 tsp vanilla
3 egg whites; room temp
1/8 tsp apple cider vinegar
preheat oven 350 degrees F
1 line two baking sheets with parchment paper
2 beat egg yolks and 2 tbs sugar on high for 3-5 minutes, until it becomes thick
and pale yellow
3 beat in vanilla
4 sift in flour, but don't mix in
5 in another bowl whisk egg whites until foamy
6 whip in apple cider vinegar
7 on low add in 3 tbs sugar and whip until stiff peaks form
8 fold 1/3 egg whites into yolk mixture, repeat mixing only until it's incorporated
9 pour batter into a pastry bag with a very large tip
10 pipe batter in 3 inch long ladyfingers about 1/2 inch wide
11 bake for 8-10 minutes, the should be firm but barely golden around the edges
12 once removed from the oven remove ladyfingers from parchment paper
so they don't stick and let cool
Tiramisu:
3 egg whites
6 egg yolks
8 oz mascarpone cheese; room temperature
2 tbs spiced rum
6 tbs sugar; seperated
1 cup fresh espresso; room temp
3 dozen lady fingers
1/4 cup dark chocolate; shaved
cocoa powder
1 whip egg whites and 3 tbs sugar until they hold stiff peaks
2 in a separate bowl whip the egg yolks and 3 tbs sugar for 3-5 minutes until the
mixture is thick and pale yellow
3 whip mascarpone and rum into the egg yolks
4 gently fold egg whites into the egg yolk mixture
5 get an 8x8 container and pour espresso in a bowl
6 dunk a ladyfinger in the espresso and soak for a few seconds (don't let them start to
fall apart, really only will take 2-3 seconds) and scoop it out with a fork
7 place it in the dish and continue until there is a bottom layer of soaked ladyfingers
in the dish
8 pour half the egg cream mixture over top of the ladyfingers, smooth out
9 dip the ladyfingers and place down another layer on top of the cream
10 sprinkle some of the shaved chocolate over top
11 pour the other half of the mixture over top of the ladyfingers and smooth out
12 shake cocoa powder lightly over the top and top with some shaved chocolate
13 cover with plastic wrap and place in fridge for a minimum of 4 hours or overnight
