Spicy Turkey Meatballs:
Meatballs:
1 1/2 lbs lean ground turkey
2 eggs
1/4 cup breadcrumbs
3 cloves garlic; minced
1 tsp oregano
2 tbs fresh basil; minced
1 tsp cumin
1 1/2 tsp dijon mustard
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp chili powder
Sauce:
1 tbs olive oil
2 cloves garlic; chopped
6 roma tomatoes; diced
1/2 cup marinara sauce
1/2 tsp red chile flakes
1 tsp sugar
1/4 tsp salt
parmesan & basil to top it with
make a batch of your choice of pasta
preheat oven 400 degrees F
1 line a baking sheet with parchment paper
2 in a large bowl mix together meatball ingredients
3 roll them into meatballs about an inch big and place on baking sheet
4 bake for 15 minutes, should be browned
5 in the meantime heat oil, garlic, chili flakes in a cast iron skillet for 1-2 minutes on medium
6 add in tomatoes, sauce, sugar, and salt and turn down to medium-low
7 simmer until the meatballs are done
8 put meatballs in the skillet with the sauce and sprinkle the parmesan flakes over the top
9 leave on heat until the cheese melts, top with basil
10 serve over pasta
- Preheat oven to 400 degrees. Line a large baking sheet with aluminum foil or parchment.
- To a large bowl, add the ground turkey, eggs, breadcrumbs, oregano, basil, cumin, mustard, salt, garlic powder, pepper, and cayenne, if using. Mix together until combined. Shape mixture into 1-inch meatballs and place them on the prepared baking sheet. Bake for 15 minutes until cooked through and browned.
- Meanwhile, make the sauce by heating the olive oil in a 12-inch cast iron skillet over medium heat. Add garlic and pepper flakes, stirring, one minute, or until fragrant but without browning the garlic. Add tomato sauce to the pan, followed by sugar and salt. Turn heat to medium-low and allow to simmer until the meatballs are finished baking.
- When the meatballs are done, add them to the skillet with the sauce. Spoon the sauce over the meatballs to coat. Sprinkle the fresh mozzarella over top and allow to cook 5 more minutes or so until the cheese melts. Sprinkle the fresh basil over top and serve over pasta cooked al dente.
