Pumpkin Muffins

Promise this is the last pumpkin themed post for a little while! I made these with the remainder of my homemade pumpkin puree for a co-worker's baby shower. She doesn't love sweet things so I stuck with a simpler pumpkin muffin and they turned out extremely moist and delicious.

Pumpkin Muffins:
inspired by this recipe

3 cups flour
2 tps baking powder
1/2 tsp baking soda
2 tsp pumpkin pie spice
1/2 cup vegetable oil
2 cups pumpkin puree
1 cup greek yogurt
3 eggs
1/2 cup applesauce
1/2 cup sugar
pumpkin seeds or walnuts for topping

preheat oven to 350 degrees F
1   in a large bowl combine flour, powder, soda, spice
2   in another bowl whisk together oil, puree, yogurt, eggs, applesauce, and suger
3   pour dry ingredients into wet ingredients and mix only until combined
4   pour batter into muffin cups and top with pumpkin seeds or walnuts
5   bake 35-40 minutes, until a toothpick comes out clean
