Thai Curry

Thai Curry has become one of Joshua's favorite things- except that it means if he ever wants it we'd have to go out. So of course I read bagillions of recipes until I mashed something together I thought he'd like. It was a win- YAY



1 onion; diced
1 red pepper; diced
3 cloves garlic; minced
1 1/2 tsp fresh grated ginger
2 1/2 -3 1/2 tbs curry paste (we used green)
1 can coconut milk
1/2 cup of vegetable stock
1/2 tsp red chili pepper flakes
1 package of extra firm tofu; diced
1 tsp sugar
2 tsp soy sauce
1/2 lime; juiced
1/4 cup cilantro; diced
2 cups rice; cooked

garnish with pine nuts and cilantro

1   in a LARGE saucepan saute onion and red pepper with a little bit of oil for a few minutes
2   then add the garlic and ginger let sit for a minute and stir in the curry paste
3   let cook for a few minutes and then add in the coconut milk,sugar, chili flakes and vegetable stock
4   add in the diced tofu and cook for 5-7 minutes
5   stir in the soy sauce and remove from the heat
6   add in the lime juice and cilantro and serve over the rice

  2. We got it from the International District here but it's at whole food and bigger grocery stores too :)
