The Ladies in Chicago

 
I was going to Chicago for work, NeoCon, so I had a plan. My mom & sisters were all off work that weekend already -a miracle in and of itself, and they agreed to drive to Chicago and hang out with me for the weekend. I have been missing my family a lot lately so this worked out to be amazing!
 
We wondered around the mile shopping, eating popsicles, just catching up. Then we went out to dinner and to my favorite bar Violet Hour where we sipped fancy drinks.
 



 
We got to  be silly, annoy one another,
and just be ourselves.

so glad they were able to come!
 


& of course then we got weird


 
We also went on the architectural boat tour in the blazing humid sun (forgot how bad it could be). The textures and shapes of all the buildings are so lovely from the water, plus it was nice to just sit for awhile and stare. The Blackhawks also won the Stanley Cup while I was there so that was kind of nuts. Then my favorite ladies drove home, but not before they hid notes around my hotel room for me so I wouldn't be so sad when I got back to my room and they weren't there anymore. So thankful for that time with them!

Happy Valentine's Day!

I was very popular at work yesterday :) I  always leave my team valentine's day cards (this year they were mad libs!) But this year I also made a bunch of adorable heart shaped champagne meringues with grapefruit buttercream. I can't say how sorry I am you didn't get one. The kicked all conversation hearts butts, except the break up ones because they are hilarious.

These little cuties were quite simple to make and I made the meringues a few days in advance so they didn't require much of my time.

Champagne meringues filled with grapefruit buttercream:

1 1/2 tsp vanilla
2 tsp white wine vinegar
6 egg whites
 few pinch of salt
1 1/2 tbs cornstarch
1 1/2 cups sugar
3 drops of champagne flavoring
(I used cinnamon heart candies on the tops of some of them for fun)

 preheat oven to 275 degrees F

1    Preheat oven to 275 degrees F. Line 2 baking sheets with parchment paper

2    In a small bowl mix together vanilla and vinegar and set aside.

3    In a large bowl add egg whites and a pinch of salt. Using a whisk attachment, beat the egg whites on medium speed until the form soft peaks.

4    Then slowly add in the cornstarch and sugar. Once incorporated beat on medium-high for 2 about 2 minutes.

5   Add in the vanilla/vinegar mixture and whip on medium-high until the mixture is glossy and can form peaks. Then beat in the champagne flavoring. Scoop the meringue into a large pastry bag with a medium size circle tip.

6   Pipe the meringue into hearts on the baking sheet. Remember the meringue will show your movements when creating the heart so try to make them with as little extra movements as possible. Also they don't puff up and run into each other so you can place them quite close on the baking sheet. Lastly attempt to make the approximately the same size :) Mine were around 1.5"

7   Once your two trays are full pop them in the oven for 15 minutes. Lay out other tray-sized pieces of parchment and pipe out hearts with your remaining meringue.

8    After 15 minutes reduce the oven to 250 degrees F and don't open the oven at all. Bake for 45-50 minutes. You don't want them to be brown you just want them to easily peel off the parchment paper and to not have any stickiness on the back of them. You can watch them pretty easily if you just turn the light on in your oven. With 3 minutes left turn the oven back up to 275 degrees F

 9   Remove the sheets and swap out the parchment paper of hearts for some uncooked ones and repeat baking method until the are all baked.

10   If you want to store them for later shake a little cornstarch at the bottom of your container and line with parchment paper (keeps them from getting soggy) Once the meringues are all cooled layer them in the container and seal it. Keep it in a cool, dry area.


Grapefruit buttercream:

1 grapefruit
8 tbs butter (1 stick)
1/2 tsp vanilla bean paste
4 cups powdered sugar
2 drops of red food coloring

1   Squeeze the grapefruit to extract all it's juice, sieve out the pulp and seed. Place the juice in a small saucepan and bring to a simmer. Reduce the grapefruit juice to 1/4 cup juice. Remove from heat and let cool.

2   Beat the butter until light and fluffy. Then beat in the vanilla and slowly the powdered sugar.

3    Then beat in on high the cooled grapefruit juice for a few minutes. If your consistency is too runny add a few more tbs of powdered sugar until you are happy with the consistency. Then beat in the red food coloring

4    Place the frosting in a pastry bag and pipe onto half of the meringue hearts. Top each one with another heart and if you're feeling up for it sprinkle on some colored sugar on the edges.

Serve to your Valentine, or half your office :)

Couch Time





The other night we sat on the couch after we both finally got home from work...

Preface: We've both had long weeks and had to go into work most of Sunday. We've done fun things but the have all been filled with other people or out of town friends. Life has felt very busy, rushed and exhausting the past few weeks. And this week we were hitting very low in our tanks.

...and Joshua looked at me and asked "will you go on a date with me tomorrow, I want to take you out. I've missed you lately and want time with you to myself"

It felt like I'd finally stopped holding my breath. I needed that and wanted that so badly.
But also, I loved that he asked me out on a date. He didn't just tell me we were going or whine that we needed to go do something. He made me feel special even in his exhaustion and weariness.

Feeling tired, overworked and oversocialized can sometimes mean we are shorter with each other, but moments like that show me how glad I am that I'm not doing it all without him. Marriage has taught us both so much about ourselves- and I feel like those moments when we finally land on our couch, just the two of us, all our work and prayers reveal themselves. I can see how we're learning to cherish what we have and who each other is and becoming.

We'll be celebrating 2 years of marriage this month and obviously we will be learning on this for the rest of our lives, but sometimes it's nice to see how we've grown with one another over these 2 years.

And then we got dressed up the next night and he took me out to dinner & gleato :)

Yellow Aster Butte Hike!


This weekend was a funny one for us because Joshua and I were convinced his mom was coming out to visit this past weekend. We had cleaned decided all our plans, and Wed morning we discussed picking her up from the airport. Until, he calls me Wed. afternoon saying never mind she comes next weekend haha. So it kind of felt like we were given a free weekend & we took full advantage!

Friday night we met at a little Italian restaurant by home and ate delicious food while a piano player was playing live and singing. The best part was he took requests and Joshua got him to sing Jesus, Etc by Wilco (he had never heard of it before) and he rocked it!

We've been wanting to go on a hike by ourselves all summer so we jumped on the opportunity Saturday and got up at 6am! and drove up to Mt. Baker, then up a gravel road 1 lane road, with no guardrail, where we put the truck in 4x4 (kind of scary). But then the hike was breathtaking! Absolutely beyond words, the best hike we've ever gone on. There were mountains layered in every direction (we actually checked, every direction), little lakes (one was covered in ice and we walked on it), but the hiking was intense.

these are the stats of the hike:
distance: 7.5 miles (but then there are a bunch of little trails to the lakes and such that we hiked)
elevation gain: 2500 ft!!! some parts seemed like you were hiking straight up
highest point: 6150 ft

It was so hard to hike down from this beautiful place!
But we had to because we met up with 4 friends and played thunderstone :)
At first we tried to hang out at a place called AFK (which apparently means away from keyboard)
which is a nerdy gaming restaurant/bar but it was full of people (mostly dressed up)
so we went to a brewery, spread out on their largest table and played for about 3 hours
It was a long day but also a really great full day
So much beauty and exersize and fresh air and a perfect ending with sharing pitchers and laughing with friends.
So our free Saturday ended up being a huge blessing

Kindness

Kindness and friendship is something that Joshua and I have really been discussing and thinking on for awhile now. What has been really cool is the different way that God keeps building upon this from the people and conversations he puts in our lives at certain times, to the books we're reading. Maybe it's just because our minds are focused on it, but regardless it has truly turned into a meditative journey for us and something we are constantly trying to change in our hearts.


We're reading Renovation of the Heart together right now and some things have really been grabbing at our hearts.

Overall I just wanted to share what's going on in our lives out here beyond our weekends and on the physical level. Also we're just really excited with all that we are learning and being challenged with.
(below is paraphrase of Dallas Willard's words mixed with mine & Joshua's)

: It's not about outward change, it must be Christlikeness of the inner being, which is not done trhough my attempt but is a gift of Grace. He allows me to transform without holding the past against me (in which letting me transform in the first place is a gift)

:This was a really heart-wrenching one for us- Stopping the behavior is not the root of the point, think of the heart that these terrors come from.
Wow just sitting with that for awhile was really a struggle because it's so much easier to forget that than let myself realize I have those really dark places and even worse what they can do to the people around me when they only see the tinest part of that place in me. The why of what I do or think or feel towards others is so much darker than the instance.

:Trying to be loving and patient = we will fail, we should do the best we can in action, but will only make real progress when we advance in love itself. It will be as a well and source of joy not an 'act' or burden
So genuinely enter Christ's way of the heart.
This thought also really held onto us, and is a great reminder of how to love people and how to work on changing how we do it and why! Also really encouraging that if you surrender and truly work through ourselves it will all be coming from a source of Joy!

:And finally the part that is hardest for me of all it seems- You must allow God to play God, which involves daily, even moment-by-moment surrender.

That's what has been on our heart's lately and if you think of us please pray for us and the areas we are working towards letting God heal and grow.

Hey Seattle - Cincinnati is Awesome!

At least half the time I tell people out here I'm from Cincinnati, they reply with - "O I'm sorry"
What!?
And every time I tell them, nicely, that I love it there and it is way better than they think.

So when we were on the way to the airport last weekend Joshua's mom took us to walk around downtown and see all the new things that have been happening.
So Seattle- below is just a small small portion of what Cincinnati is, and it still looks stinkin sweet:

Cincinnati has been doing a lot in over the rhine downtown and a lot of new restaurants are moving in, whiskey bars, vintage stores, local art stores, and the one we stopped at was a crepe restauraunt- yumm! We all had the 'Nati

Fountain Square in the middle of downtow. There was a concert being set up because during the summer there are concerts, movies, dancing going on every night in the square.

Since we were Porkopolis we have artists and organizations decorate
pigs that are placed all over downtown.

Washington Park downtown just got a huge makeover with playgrounds, water features and more.
Plus Cincinnati has Graeters!

So that's a little bit of Cincinnati, not including all the new fabulous small restaurants that have opened up that rival Ballard and Capitol Hill's, breweries are moving back into our brewery district, our baseball team is actually winning games this season, more parks not shown along the waterfront with bike paths running through them, we're getting a streetcar, we have a year round outdoor market too!

Really I love Seattle- But come on Cincinnati as you can see is also something to love! It's smaller, there are no mountains in the distance, but it still not something to apologize for :)
