Yogurt Apricot Scones


If you're not a fan of the drier type of scones then try this one! It was moist and delicious!
Plus they are less work you, you don't have to roll or cut them.

Apricot Yogurt Scones:

1 cup dried apricots; chopped (you could also try with different kinds of dried fruit)
2 cups flour
1 tbs baking powder
1/2 tsp baking soda
1/4 cup sugar
1/2 tsp salt
6 tbs butter; cold
1 egg
3/4 cup plain yogurt
1/4 cup milk
1 1/2 tps vanilla

1   preheat oven to 400
2   place apricots in a bowl an dpour hot water over the m to plum them up, let sit about 10 minutes
(this makes a huge difference, don't skip!)
3   in a large bowl mix together the flour, powder, soda, sugar and salt
3   then cut the butter into 1/2 tbs size pieces and cut it into the flour mixture, or grate it in
4   in a small bowl whisk together the egg, yougurt, milk, and vanilla
5   pour wet ingredients into the dry and mix until just incorporated
6   then use a 1/2 cup measuring cup to scoop out the dough and place it on the baking sheet
7   if the spread a bit flour your hands and mold them a bit
8   bake for 20-20 minutes, until golden brown
