Sausage and Apple Stuffed Acorn Squash


I've never really given squash much of a chance, but when I saw this recipe I was intrigued. Our variation turned out delicious and the squash was cooked perfectly and fell right into your fork when you grabbed it with the stuffing.
It was really simple but had a really impressive look and taste, will make again, especially for company!

My friend had made something similar only the other week and also said it turned out awesome- 2 recommendations= make it!






Sausage and Apple Stuffed Acorn Squash:

1 acorn squash; cut in half and seeds removed
2 tbs olive oil
4 cloves garlic; minced
1 tsp thyme
1/2 lb sausage
1/4 onion; diced
1 hot pepper; diced
6-8 mushrooms; diced
2 stalks celery; diced
2 small apples or 1 large; sliced thinly and halved
1/4 cup basil; chopped
S&P
1/2 cup bread crumbs
1 egg

preheat oven 400
1    place halved and seeded acron squash on a baking sheet, cut side up
2    mix olive oil, garlic, and thyme in a small bowl and brush on top
      and inside squash
3    place in oven to bake for 1 hour
4    meanwhile, shape the sausage into small balls and cook in oil until browned
5    toss in the onion, pepper, mushrooms, and celery and cook until tender
6    add in the apple, basil, and S&P
7    remove from heat and stir in bread crumbs
8    whisk the egg in a small bowl and pour 1/2 of it into the sausage mixture
9    mix well
10  remove squash stuff each well and overflowing with the sausage mixture
11  cover each half with aluminum foil
12  bake for 20 minutes
13  remove from oven, remove foil, and top with grated cheese
