Being busy & homeade ravioli


Last week Joshua and I had something to do with people from last Saturday- Friday night. They were all good thing, great things like rock climbing, setting up church, dinner with friends, running and playing games with friends, baking for work baby shower, small group, baking for chuch, apartment building dinner and big bang theory night, more time with friends.

We wouldn't take back any of them but whew are we exhausted. My poor husband, one night last week I'm pretty sure I cried for an hour because I was tired and I'm quite sure I just kept repeating the phrase- I just wanna be with you. So because since I'm pretty bad at saying no and setting apart time to do nothing he helped by calling off doing anything with people this weekend. I understand that may seem odd but we needed it. We are both so used to being busy and in school we always picked ditching each other to go to coffee with someone else and such but when we got married we wanted to make sure we always made alone time for ourselves. We saw the toll business can take on the other and made it our goal for at least our first year of marriage to not let ourselves get too involved or wrapped up in always saying yes and making long lists of plans. And I'm so glad that he was there to help restrain me :) We both feel so much better and I hope we can remember to continue to keep making our alone time a priority when we need to.

But now on to what we did Friday. We had our friends Rachel and Alex over. They brought bruchetta and we made ravioli, took a trip to Gasworks park, and played some cards. Let's just say it was super yummy and super fun!


Recipe:

filling:
eggplant; diced
basil; chopped
garlic; minced
S&P
goat cheese

dough:
4 eggs
3 cups of flour
1/2 cup water
(1 egg for egg wash)

1   mix the eggs, flour, and water together
2   turn the dough onto a floured surface and knead for 5-7 minutes
3   wrap the dough in plastic wrap and let sit for 30 minutes
4   then roll out 1/2 of the dough into a rectangle about 1/8" thick
5   mix the eggplant, basil, garlic, S&P in a small bowl
6   on 1/2 the rectangle smear on some goat cheese in 1 1/2-2" apart
     on the dough and then put some filling on top of it
7   then whisk an egg in a bowl and brush onto the empty half of the dough
8   fold the dough over and smooth out the air bubbles
9   using a pizza cutter slice teh dough into the individual ravioli and pinch together
     each side with your fingers or the tines of a fork
10 repeat with the other half of the dough
11 boil water and place the ravioli in to cook for 10-15 minutes

for the sauce we heated up some jarred marinara sauce and some diced zucchinni and served it over the ravioli
also finished it off with some parmesan cheese!
